Rigatoni W/ Steak & Marinara Sauce

  1. Heat 2 Tablespoons of oil in large pan.
  2. Sprinkle steaks with salt and pepper.
  3. Cook the steak’s until brown on outside, but still rare in the middle, about 3 minutes per side.
  4. Transfer to plate and set aside to cool completely.
  5. Add 2 more Tablespoons of oil to pan.
  6. Sauté onions and carrots until onions are translucent, about 8 minutes.
  7. Add salt and pepper to taste.
  8. Add garlic and oregano and sauté 1 minute.
  9. Add wine and simmer 1 minute.
  10. Add marinara sauce and beef broth.
  11. Cover and simmer over medium-low heat about 10 minutes.
  12. Season too taste with salt and pepper.
  13. Meanwhile trim off any fat from steaks.
  14. Cut into bite size pieces-set aside.
  15. Cook rigatoni according to package directions.
  16. About 10 minutes, drain, toss with sauce and juices.
  17. Transfer to serving bowl and top with Parmesan Cheese and serve.
  18. You don't have to use Rib Eyes in this recipe. You can use a nice sirloin if you prefer.
