Ricotta Red Grape Teacake

Ingredients
- 1⁄2 cup caster sugar
- 2 eggs
- 1 teaspoon vanilla essence
- 3⁄4 cup ricotta cheese
- 1 cup plain flour
- 1 teaspoon baking powder
- 1 teaspoon mixed spice
- 1 cup red seedless grapes
- 1⁄2 cup honey
- cream, to serve
Directions
- Pre heat oven to 180 C.
- Grease and line a round 20 cms cake tin.
- Using electric beater, beat sugar, eggs and vanilla till pale and fluffy.
- Beat in ricotta till just combined.
- Sift in flour, baking powder and mixed spice.
- Fold dry ingredients through ricotta mixture.
- Fold through grapes.
- Spoon into prepared pan.
- Bake 25 - 30 minutes.
- Pierce top of cake with skewer.
- Place honey in jug, microwave on high for 60 seconds.
- Pout warm honey over cake and leave for 10 minutes.
- Serve warm cake with cream.
