Ricotta Cheesecake

This is a novel tasting cheesecake that goes great with pasta. It is not a "sweet" cheesecake.

Ingredients

• 3  lbs ricotta cheese
• 1  cup sugar
• 7  eggs
• 2  ounces rum
• 1  teaspoon vanilla
• 1  teaspoon  orange rind
•  confectioners' sugar

Directions

1. making the batter:.
2. In blender beat ricotta until smooth.
3. Beat in sugar.
4. add eggs 1 at a time.
5. On slow speed:.
6. stir in rum, vanilla and orange rind
7. preparation of pan:.
8. cut wax paper to fix bottom of springform pan.
9. butter bottom and sides of pan.
10. pour batter into pan.
11. bake 350 degrees for 1 hour and 15 minutes.
