- 1 cup sugar
- 7 eggs
- 2 ounces rum
- 1 teaspoon vanilla
- 1 teaspoon orange rind
- confectioners' sugar
Directions

- In blender beat ricotta until smooth.
- Beat in sugar.
- add eggs 1 at a time.
- On slow speed:.
- stir in rum, vanilla and orange rind
- preparation of pan:.
- cut wax paper to fix bottom of springform pan.
- butter bottom and sides of pan.
- pour batter into pan.
- bake 350 degrees for 1 hour and 15 minutes.
