Directions

  1. Melt butter in heavy large saucepan over medium heat.
  2. Add turkey neck (s) and onion.
  3. Cook until golden brown, stirring occasionally.
  4. Add all remaining ingredients.
  5. Bring to a boil.
  6. Reduce heat, cover partially, and simmer until reduced to one quart liquid (about 1-3/4 hours).
  7. Strain.
