Rich Chocolate Pudding

A rich double chocolate pudding for 1 or 2. Reminds me of Jell-O Instant Chocolate Fudge Pudding Mix. Easily sized up for larger servings. May be served warm or cold.

• Yields: 1 cup

Ingredients

• 1⁄4 cup sugar
• 2  tablespoons  cocoa
• 1  tablespoon cornstarch
• 1  cup milk
• 1⁄2 ounce  semisweet chocolate
• 1⁄2 tablespoon butter
• 1⁄2 teaspoon vanilla

Directions

1. Mix sugar, cocoa and cornstarch, whisk in milk until smooth.
2. Whisk over medium to medium-high heat and bring to a boil. Boil for 2 minutes.
3. Remove from heat, stir in semi-sweet chocolate, butter and vanilla. Chill.
