Rice with Ginger and Coriander

Great side dish that can be served with asian style meals.

Yields: 4 side dishes

Ingredients

  • 1  cup water
  • 1  cup  chicken stock
  • 1  cup white rice
  • 2  teaspoons  oil
  • 4  cloves garlic, crushed
  • 2  tablespoons fresh ginger, minced
  • 3  shallots, thinly sliced
  • 14 teaspoon  chili pepper flakes
  • 3  tablespoons  finely chopped  coriander

Directions

  1. Heat water and stock in a medium saucepan over medium high heat.
  2. Stir in rice and bring to boil.
  3. Reduce heat to low.
  4. Cover and simmer for 20- 25 minutes or until rice is tender and liquid is absorbed.
  5. While rice is cooking, heat oil in a wok over high heat and add garlic, ginger, shallots and chilli pepper.
  6. Stir fry 30 seconds or until fragrant.
  7. Remove from heat.
  8. Fluff rice with a fork and stir into ginger mix, adding coriander.
