Rice Pancakes

Ingredients
- 1 cup cooked rice
- 1 tablespoon minced onion
- 1⁄3 cup milk
- 2 tablespoons milk
- 1 egg, beaten
Directions
- Simmer rice, onion, and 1/3 cup milk over low heat, covered, until the rice is soft and the milk is absorbed.
- Remove from heat, and add the rest of the milk and the egg.
- Drop mixture by tablespoonfuls into hot greased frying pan.
- Brown lightly on both sides.
- Serve with syrup, honey, etc.
