Rice Muffins

Ingredients
- 1 1⁄2 cups flour
- 2 teaspoons baking powder
- 1⁄2 teaspoon salt
- 2 tablespoons sugar
- 3 tablespoons soft shortening or 3 tablespoons liquid oil
- 1 cup cold cooked white rice
- 1 egg, beaten
- 1 1⁄4 cups milk
- 1⁄2 cup cubed cheddar cheese
Directions
- Sift dry ingredients togther. Cut in shortening or stir in oil. Add rice, egg, cheese and milk; mix enough to moisten dry ingredients.
- Grease muffin tins. Fill muffin tins 3/4 full. Bake 425 degrees for 25 minutes.
