Ingredients
- 2 large onions, chopped
- 3 large carrots, shredded
- 2 chili peppers, chopped
- 3 large tomatoes, diced
- 2 cups long grain rice
- 3 tablespoons oil
- 2 cups water
- 2 teaspoons salt
Directions
- wash rice and leave in water.
- heat oil, add onions and mix until slightly browned.
- add carrots, tomatoes and peppers and let them simmer
- add 4 cups water and let it boil.
- strain rice and add it to the pot, add the salt.
- cover and reduce heat to medium low, cook for 20 minutes.
- remove from heat and fluff with a fork.
