Rice Flour Tarts

A tasty holiday treat

Ingredients

  • 12 cup butter
  • 23 cup sugar
  • 3  eggs, well beaten
  • 23 cup  rice flour
  • 12 teaspoon  almond extract
  • 1  pinch salt

Directions

  1. Line small cupcake pans with rounds of uncooked rich pastry. Put 1/2 tsp of raspberry jam in each.
  2. Cream butter and sugar and add eggs. Blend in flour, almond extract and salt.
  3. Top each tart with this mixture and bake at 375 for about 25 minutes.
