Rhubarb Tapioca

Yields: 5-6 cups
Ingredients
- 1⁄4 cup minute tapioca
- 1 1⁄2 cups sugar
- 1⁄2 teaspoon salt
- 2 1⁄2 cups water
- 2 1⁄2 cups rhubarb
- 1 cup crushed pineapple, lightly drained
Directions
- Combine the first 5 ingredients, and bring to a boil over medium heat, stirring constantly.
- Remove from heat and cool.
- Add pineapple.
