Rhubarb on the Simple

Based on a recipe from Paula Boyer Rougny’s book, Happiness Is A Kitchen in Maine. She says her friend “Gretchen serves this in stem dishes with cookies on the side.” Cook time doesn’t include time to cool to room temperature. Show more

Serves: 8

Ingredients

  • 2  lbs rhubarb, cleaned, trimmed, cut into 1 inch pieces
  • 12 cup water
  • 1  lemon, zested
  • 1  cup sugar

Directions

  1. Combine all ingredients in saucepan set over medium heat. Cook 6 or 7 minutes or until tender.
  2. Cool to room temperature.
  3. Puree in a blender or food processor.
  4. Spoon into individual dishes.
