Ingredients
- 1 1⁄2 cups rhubarb, diced
- 1⁄2 cup orange juice
- 1 orange, zest of
- 1 small banana
- 1 1⁄2 cups flour
- 1⁄2 cup sugar
- 1⁄2 cup oatmeal
- 1 1⁄2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 2 tablespoons vegetable oil
Directions
- Preheat oven to 350F and line your muffin pan with cupcake papers or grease very well.
- Mix wet and dry ingredients separately, then combine.
- Bake muffins for half an hour, or until they test done.
