Ingredients
- 1 1⁄2 cups brown sugar
- 1⁄2 cup butter, softened
- 1 egg
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 2 cups flour
- 1 cup buttermilk or 1 cup sour milk
- 1 1⁄2-2 cups rhubarb, cut into small pieces
Topping
- 1⁄2 cup sugar
- 1 teaspoon cinnamon
Directions
- Mix brown sugar, butter, egg and vanilla.
- Add baking soda, salt, flour and buttermilk.
- Mix until fluffy.
- Add rhubarb.
- Place batter in a 9x13 inch GLASS pan.
- Mix sugar and cinnamon together and sprinkle on top.
- Bake at 350 degrees Fahrenheit for 40 minutes.
