Rhubarb Bread

This recipe uses less brown sugar then other I've looked at.

  1. Can use cinnamon and sugar mixture.
  2. Beat together 1 cup brown sugar, white sugar and oil.
  3. Add egg and beat well.
  4. Sift flour, salt, baking soda and cinnamon then add to first mixture, alternating with buttermilk.
  5. Add vanilla and nuts; mix well.
  6. Stir in rhubarb.
  7. Put into greased pans.
  8. Blend topping together and sprinkle on top of batter.
  9. Bake for 1 hour at 375 degrees or until done.
