Rhubarb Bread

Ingredients
- 1 cup brown sugar
- 1⁄2 cup white sugar
- 2⁄3 cup vegetable oil
- 1 egg
- 2 1⁄2 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 cup buttermilk
- 1⁄2 cup nuts, chopped
- 1 1⁄2 cups rhubarb, chopped
- 1 teaspoon vanilla
TOPPING
- 1⁄2 cup brown sugar
- 1 tablespoon butter, softened
Directions
- Can use cinnamon and sugar mixture.
- Beat together 1 cup brown sugar, white sugar and oil.
- Add egg and beat well.
- Sift flour, salt, baking soda and cinnamon then add to first mixture, alternating with buttermilk.
- Add vanilla and nuts; mix well.
- Stir in rhubarb.
- Put into greased pans.
- Blend topping together and sprinkle on top of batter.
- Bake for 1 hour at 375 degrees or until done.
