Rhubarb Bread

Yields: 2 loaves
Ingredients
- 1 1⁄2 cups brown sugar
- 2⁄3 cup oil
- 1 egg
- 1 teaspoon baking soda
- 1 cup buttermilk
- 1 teaspoon salt
- 1 teaspoon vanilla
- 2 1⁄2 cups flour
- 1⁄2 cup nuts, chopped
- 1 1⁄2 cups rhubarb, diced
Topping
- 1⁄2 cup sugar
- 1 tablespoon butter
- 1 teaspoon cinnamon
Directions
- Preheat the oven to 325°F.
- Grease two loaf pans.
- Dice the rhubarb and chop the nuts.
- Mix everything, except the topping ingredients, together in a large bowl.
- Mix well and pour into prepared loaf pans.
- Topping: Mix the topping ingredients together and sprinkle over the top of the batter.
- Bake for 60 minutes, taking care not to overbake. This was in big letters so it must be a problem to watch out for lol.
