Reuben Casserole #SP5

Official Contest Entry: Simply Potatoes 5Fix. Casserole dish based on the classic Reuben sandwich

Ingredients

• 1 (20 ounce) bag  Simply Potatoes® Shredded Hash Browns
• 2  cups  shredded cooked corned beef
• 1⁄2 cup  thousand island dressing or 1⁄2 cup spicy brown mustard
• 1 (10 ounce) can sauerkraut, with caraway seeds, drained
• 1  cup  shredded swiss cheese

Directions

1. Preheat oven to 400°F.
2. In glass casserole dish sprayed with nonstick spray layer potatoes, corned beef.
3. Spread dressing (or mustard) on meat then sauerkraut and top with shredded swiss cheese.
4. Bake in oven for 20-30 minutes until cheese is bubbling and slightly brown.
5. Serve family style with crisp dill pickles.
