Renal-Friendly Fried Potatoes

Fried potatoes. Phosphrous 105. Potassium 388. For leached potatoes subtract 30 to 50 percent of the listed potassium. I substract 50% because I am very careful to soak potatoes the maxiumn amount of time. Serving size 7 ounces. Show more

Ingredients

  • 4  large potatoes
  • 14 cup olive oil
  • 1  tablespoon  salt free  Mrs. Dash seasoning mix

Directions

  1. Cut potatoes as if for french fries but not as long.
  2. Pour oil in large skillet.
  3. Add leached potatoes.
  4. Fry until soft and slightly browned.
  5. LEACHED POTATOES:
  6. Cut potatoes as desired for frying, french fries or cubed for mashed.
  7. Place cut potatoes in 10 times the amount of water to potatoes.
  8. Soak at least 4 hours, overnight in the frig is better.
  9. Drain potatoes and rinse again.
  10. Pat dry if potatoes are going to be fried.
