Regal Ham and Broccoli

I probably copied this from one of my mother's cookbooks. We use to exchange cookbooks quite a lot.

Serves: 4

Ingredients

  • 3  cups cooked rice
  • 2 (10 ounce) packages  frozen broccoli spears, cooked and drained
  • 14 cup margarine
  • 12 cup onion, chopped
  • 1  teaspoon thyme, crushed
  • 3  tablespoons flour
  • 3  cups milk
  • 4  cups cooked ham, cubed
  • 8  ounces swiss cheese, sliced
  • 12 cup  buttered bread crumb

Directions

  1. Spoon rice into a buttered 3- quart casserole.
  2. Place broccoli spears on top of rice.
  3. Melt margarine in a saucepan.
  4. Add onion and thyme.
  5. Stir in flour and cook, stirring, until hot and bubbly.
  6. Bring milk to a boil and add all at once to the flour mixture.
  7. Cook stir until until thickened and smooth.
  8. Stir in ham.
  9. Pour over broccoli.
  10. Layer cheese on top.
  11. Sprinkle on breadcrumbs.
  12. Bake at 350F for 45 minutes, or until golden brown on top.
