Refrigerator Bran Muffins

Yields: 24-40 muffins
Ingredients
- 1⁄2 cup vegetable oil
- 1⁄2 cup applesauce
- 1 cup granulated sugar
- 6 eggs
- 1⁄3 cup molasses
- 3 cups milk
- 5 cups natural bran
- 3 cups whole wheat flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup blueberries (or raisins or dates)
Directions
- In large bowl, beat together oil, sugar and eggs until well mixed. Add remaining ingredients and stir until combined. Cover and refrigerate overnight or up to 6 weeks.
- Spoon batter into paper-lined or nonstick muffin tins and bake in 425 F oven for 15 to 20 minutes or until firm to the touch.
- Makes 24 large muffins or 48 medium muffins.
