Red Wine Sauce for Pasta or Chicken

Yields: 2 cups
Ingredients
- 3 tablespoons butter
- 1⁄2 cup chopped onion
- 3 garlic cloves, minced
- 3 tablespoons chopped red peppers
- 2 tablespoons flour
- 2 cups beef broth
- 1 cup red wine
- 1 tablespoon sugar (to taste)
- 1 bay leaf
- 1 teaspoon dried thyme leaves
- 2 teaspoons parsley
- 3⁄4 teaspoon rosemary
- salt and pepper (to taste)
Directions
- Heat butter in a large saucepan over medium heat and add onion, garlic, and peppers.
- Saute for 3 minutes and add flour until incorporated.
- Add next 7 ingredients and bring to a boil.
- Once thickened, reduce heat to low and simmer for 10 to 15 minutes.
- If mixture becomes too thick add additional broth.
- Serve hot.
