Red Velvet Cake

A moist cake with a subtle chocolate flavor. If you want to go food-coloring crazy, you can dye the icing green and you'll have a super-retro Christmas cake....

Ingredients

• 1 (18 1/4ounce) package  yellow cake mix
• 1 (3 1/2ounce) package instant vanilla pudding
• 4  eggs
• 1  ounce  red food coloring
• 1⁄2 cup  vegetable oil
• 1  cup water
• 1  tablespoon distilled white vinegar
• 1  tablespoon  unsweetened cocoa powder
• 1  cup  cold milk
• 1 (8 ounce) package cream cheese
• 1 (3 1/2ounce) package instant vanilla pudding
• 1 (8 ounce) container Cool Whip

Directions

1. Preheat oven to 350 degrees.
2. Grease and flour cake pans.
3. Mix together cake mix, 1 box pudding mix, eggs, oil, food coloring, water, vinegar & cocoa. Pour into prepared cake pans.
4. Bake @ 350 degrees for 35 to 40 minutes. Cool on wire racks.
5. Beat together milk and cream cheese. Mix in 1 box pudding mix. Fold in cool whip. Refrigerate until firm.
6. Ice cake.
