Red Tomato Salsa

Ingredients
- 3 ripe tomatoes, peeled, seeded and roughly chopped
- 1 red onion, diced
- 1⁄2 cup loosely packed chopped cilantro
- 1 jalapeno pepper, minced
- 3 roasted garlic cloves
- 1 lime, juice of
- 1⁄4 cup red wine vinegar
- salt
- ground black pepper
Directions
- Combine tomatoes, onion, cilantro, jalapeno, garlic, lime juice, and vinegar in blender.
- Process on slow speed until desired consistency is reached. Add salt and pepper to taste.
- Refrigerate to meld flavors.
