Red Snapper Ala Greek

Yields: 4 red snapper
Ingredients
- 2 tablespoons extra virgin olive oil
- 24 ounces red snapper, cut in 4 pieces
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 4 (15 ounce) cans tomatoes (you can use fresh tomatoes chopped and drained)
- 2 1⁄2 tablespoons capers, chopped
- 1⁄2 cup black olives
- 1⁄4 cup green olives
- 1⁄2 teaspoon chili pepper flakes, crushed
- 1⁄2 teaspoon fresh parsley, chopped
- 1⁄2 teaspoon sea salt
- 1⁄2 teaspoon pepper
Directions
- put oil in pan and brown fish for 1 min per side. add onions and garlic cook for 3 min till translucent.Place other ingredients in and a med bowl add onions and garlic . Put fish in a baking dish cover with all other ingridents and bake uncovered for 15 to 20 minutes tile done. Bake at 425.
