Red Pepper Jelly Cheesecake

  1. In a food processor mix cream cheese, egg, garlic & Parmesan.
  2. When well blended add 2/3 of jar of jelly.
  3. Place a pan of water in the oven to keep cheesecake moist while baking.
  4. Pour mixture into a 6" spring foam pan and bake beside the water at 350F for 40 minutes or until a knife inserted in centre comes out clean.
  5. Chill for several hours.
  6. Remove from pan, cover with rest of the remaining jelly and serve with crackers.
