Red Onion Soup

  1. Heat 3 tablespoons oil in heavy large pot over med-high heat.
  2. Add onions and sauté until brown, about 25 minutes.
  3. Sprinkle flour over sautéed onions; stir 2 minutes.
  4. Gradually mix in broth, scraping up browned bits from pan bottom.
  5. Simmer 15 minutes.
  6. Working in batches and using on/off turns.
  7. blend soup in processor to coarse puree.
  8. Return soup to pot and bring just to simmer.
  9. Season with salt and pepper.
  10. Ladle soup into bowls.
