Red Eye Tortilla Soup

Ingredients
- 1 (33 7/8ounce) bottle bloody mary mix (Red Eye brand)
- 32 ounces chicken broth
- 1 cup cilantro, fresh chopped
- 1 tablespoon cumin
- 2 chicken breasts, grilled, diced
- 1 1⁄2 cups cheddar cheese (more or less) or 1 1⁄2 cups monterey jack cheese, shredded (more or less)
- 3 cups tortilla chips (more or less)
Directions
- Place first 4 ingredients into a saucepan and bring to a boil.
- Meanwhile, crumble tortilla chips between 8 serving bowls.
- Place chicken on top of tortilla chips.
- Sprinkle with cheese.
- Ladle hot soup over all and serve immediately.
- Garnish with sour cream if desired.
