Red Cold Soup

A friend made this recently and just went on and on about how good it was. I have no measurements so you will get to "wing it." Show more

Directions

  1. Reserve water from cooking the beets, just in case you want to thin the soup out a bit.
  2. After the beets are cooled, either leave them in the pot and use a stick blender or, better, place in your blender on steroids or food processor.
  3. Add everything else and blend well.
  4. Taste and adjust.
  5. Enjoy!
