Red Chile Potatoes

Ingredients
- 4 medium baking potatoes, cut in 1 inch cubes
- 2 tablespoons olive oil
- 1 teaspoon seasoning salt
- 1 1⁄2 cups red enchilada sauce
- 1 cup shredded cheddar cheese
Directions
- Boil potatoes until tender but firm. Drain.
- In skillet, heat oil over medium high heat. Add potatoes and season with salt. Cook, stirring, until golden brown and crispy, 8-10 minutes.
- Place potatoes on ovenproof serving platter. Top with enchilada sauce and cheese. Bake at 375 for 20-25 minutes, until cheese is melted.
