Red Cabbage With Apples and Honey

  1. Preheat oven to 300°F.
  2. Grind cardamom and coriander to powder in a spice grinder. Pass through a fine mesh sieve.
  3. In a small saucepan, heat the honey to boiling. Add the spices, apple juice and vinegar. Bring back to the boil and reduce by half.
  4. In a Dutch oven or medium cast iron pot, cook the bacon over medium heat until translucent and limp, 5-7 minutes. Add onions and saute 5 minutes. Add cabbage and apples and cook, stirring occasionally, until soft, about 15 minutes. Pour the honey-apple-vinegar sauce over the vegetables and toss to coat. Cover pot and place in preheated oven. Bake 2 hours, or until cabbage is very tender.
