Red Beans & Rice Again

Ingredients
- 1 lb dried kidney beans
- 2 quarts water
- 1⁄2 lb salt pork
- 3 cups onions, chopped
- 1 cup green onion, chopped
- 1 cup fresh parsley
- 1 tablespoon garlic salt
- 1⁄4 teaspoon dried oregano
- 1 teaspoon red pepper
- 1 tablespoon Worcestershire sauce
- 1 teaspoon pepper
- 1 1⁄2 teaspoons hot sauce
- 1 lb smoked sausage
Directions
- Soak beans overnight.
- Add salt pork to beans. Cover and simmer 45 minutes.
- Stir in next 10 ingredients. Cook one hour.
- Brown sausage and drain. Add to bean mixture.
- Cover and simmer 45 minutes, adding more water if needed.
- Serve over hot rice.
