Red Beans and Rice

Ingredients
- 2 garlic cloves
- 2 tablespoons olive oil
- 4 stalks celery
- 1 yellow onion
- 2 bell peppers
- 1 teaspoon thyme
- 1 teaspoon oregano
- 2 bay leaves
- 1⁄2 tablespoon paprika
- 48 ounces vegetable broth
- 2 (16 ounce) cans red beans
- 28 ounces smoke sausage links
Directions
- dice the garlic cloves, onion, celery, and peppers, and add to a heated large pot with the olive oil. cook over medium heat for about 8 minutes (until softened).
- add the vegetable broth, thyme, oregano, bay leaves, and beans to the pot.
- bring to a boil, cover, reduce heat and simmer for 2 hours or more.
- remove the bay leaves, and add the sliced sausage.
- simmer 45 minutes.
- serve with rice.
