  1. dice the garlic cloves, onion, celery, and peppers, and add to a heated large pot with the olive oil. cook over medium heat for about 8 minutes (until softened).
  2. add the vegetable broth, thyme, oregano, bay leaves, and beans to the pot.
  3. bring to a boil, cover, reduce heat and simmer for 2 hours or more.
  4. remove the bay leaves, and add the sliced sausage.
  5. simmer 45 minutes.
  6. serve with rice.
