Red Bean, Rice and Sausage Soup

  1. In a soup pot, combine the onion, garlic, oil and 3 Tbl of the chicken broth.
  2. Cook over medium heat, stirring frequently, until the onion begins to brown (5-6 minutes).
  3. Add the broth, water and rice.
  4. Cover and boil for 20 minutes.
  5. Add the rest of the ingredients except the kielbasa.
  6. Bring back to the boil.
  7. Reduce heat, cover and simmer for 20 minutes, stirring occasionally.
  8. Add the kielbasa and cook for 10 minutes.
