Red Bean, Rice and Sausage Soup

Ingredients
- 1 large onion
- 1⁄8 teaspoon minced garlic
- 1 teaspoon olive oil
- 3 1⁄2 cups chicken broth
- 3 diced carrots
- 3 diced stalks celery
- 1⁄2 diced bell pepper
- 3⁄4 cup water
- 1 (15 ounce) can tomato sauce
- 2 (16 ounce) cans kidney beans
- 1⁄4 teaspoon dried thyme
- 1 bay leaf
- 1⁄8 teaspoon ground black pepper
- 3⁄4 cup brown rice
- 6 ounces sliced kielbasa
Directions
- In a soup pot, combine the onion, garlic, oil and 3 Tbl of the chicken broth.
- Cook over medium heat, stirring frequently, until the onion begins to brown (5-6 minutes).
- Add the broth, water and rice.
- Cover and boil for 20 minutes.
- Add the rest of the ingredients except the kielbasa.
- Bring back to the boil.
- Reduce heat, cover and simmer for 20 minutes, stirring occasionally.
- Add the kielbasa and cook for 10 minutes.
