Really Good Zucchini Bread

Yields: 2 loaves
Ingredients
- 3 eggs
- 1⁄2 cup oil
- 1⁄2 cup unsweetened applesauce
- 2 cups raw zucchini, shredded
- 1 cup sugar
- 1⁄4 teaspoon baking powder
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 2 teaspoons vanilla
- 1 cup nuts, chopped
- 2 cups flour
Directions
- Preheat oven to 350 degrees.
- Put zucchini in strainer and press or squeeze with hands to get excess liquid out.
- Beat eggs, sugar, applesauce, and oil together.
- Add flour, baking powder, soda, cinnamon, salt, vanilla, and nuts.
- Mix together by hand.
- Add zucchini (minus liquid).
- Beat mixture.
- Pour into 2 greased and floured loaf pans ( I use the baking spray with flour in it).
- Bake 40 to 45 minutes at 350°F (I bake on middle shelf for 20 minutes then rotate and bake for another 20 to 25 minutes)
- Recipe may be doubled.
