Raw Vegan Pasta Sauce / Salad Dressing

Yields: 2 cups
Ingredients
- 1⁄2 cup water
- 5 dates, medjool
- 1 tablespoon apple cider vinegar
- 1 bell pepper, red
- 6 tomatoes, grape
- 3 garlic cloves
- 1⁄2 teaspoon basil, dried
- 1⁄4 teaspoon oregano, dried
- 1⁄8 teaspoon chili powder
- 1⁄8 teaspoon fennel powder
Directions
- Remove the pits from your dates.
- In a high speed blender/Vitamix, add your water and dates. Let them soak for 10 minutes.
- Add the remaining ingredients and blend until smooth.
- Taste and add additional spices if desired.
- Add more water if you want a thinner consistency.
- Pour over a bed of lettuce and veggies or over spiralized zucchini for a Raw Vegan Pasta Dish. Enjoy.
