Raw Spiced Applesauce

Serves: 4

Ingredients

  • 4  apples, washed well, unpeeled, cored and cut into chunks
  • 12 teaspoon orange zest
  • 2  tablespoons  fresh orange juice
  • 14 teaspoon cinnamon
  • 18 teaspoon cardamom
  • 1  pinch kosher salt
  • 14 cup  plain  Greek yogurt
  • 14 cup  chopped pecans, toasted

Directions

  1. Combine apples, zest, juice, cardamom, cinnamon and salt in a food processor.
  2. Whirl on PULSE to desired consistency, scraping down the sides as necessary. Note: I preferred the applesauce in small pieces as opposed to a smooth sauce. You will definitely need more than 2 tablespoons fresh orange juice. I had to add at least one half cup more liquid-diluted orange juice with filtered water, to attain the consistency I wanted. You'll have to drain the applesauce, too.
  3. Top each serving with a dollop of yogurt and garnish with the toasted pecans.
