Raw Sesame Snap Cookies

An Ani Phyo recipe, these cookies are great!

Yields: 26 cookie

Ingredients

  • 1  cup  dried apricot
  • 12 cup  shelled pistachios
  • 12 cup sesame seeds
  • 1  teaspoon  lemon extract or 1  teaspoon lemon juice
  • 1  teaspoon  agave syrup (or honey)

Directions

  1. Process apricots in food processor.
  2. Add the rest of the ingredients and process well.
  3. Scoop by the spoonfull into small balls and flatten with your hand (helps to have wet hands.
  4. Store in the fridge or freezer.
