Raw Sesame Snap Cookies

Ingredients
- 1 cup dried apricot
- 1⁄2 cup shelled pistachios
- 1⁄2 cup sesame seeds
- 1 teaspoon lemon extract or 1 teaspoon lemon juice
- 1 teaspoon agave syrup (or honey)
Directions
- Process apricots in food processor.
- Add the rest of the ingredients and process well.
- Scoop by the spoonfull into small balls and flatten with your hand (helps to have wet hands.
- Store in the fridge or freezer.
