Raw Food Cheesecake Recipe

I really like this recipe as it gives a great non-dairy choice for "standard" cheesecake. It uses macadamia nuts for the bulk of the "crust" layer, and cashews are a big part of the "filling" layer. Although it's not necessary, if you want to prepare the night before, you could soak the nuts in water. It's suggested that soaking raw nuts may bring them into a more "alkaline" state and also make them more easily digested by the body. Show more

Yields: 1 cheesecake

Ingredients

  • Bottom Layer Ingredients

  • 14 cup  dried coconut
  • Crust Ingredients (Layer 2)

  • 1 12 cups  macadamia nuts
  • 12 cup dates
  • Cheesecake Filling Ingredients (Layer 3)

  • 3  cups cashews
  • 34 cup lemon juice
  • 34 cup raw honey (or other raw sweetener)
  • 34 cup coconut oil
  • 1  tablespoon vanilla
  • Topping

  • 2  cups frozen mixed berries (or any frozen fruit)
  • 12 cup dates

Directions

  1. Add each layer into a glass baking dish.
  2. When multiple ingredients comprise a layer, blend them in a food processor.
  3. Place in the freezer for an hour to set.
