Raw Cauliflower and Radicchio Salad.

Ingredients
- 1 head cauliflower
- 1 small head radicchio
- 3 stalks celery, diced
- 5 scallions, diced
- 1⁄2 cup raisins
- 1⁄2 cup shelled pistachios
- salt and pepper
- 4 tablespoons apple cider vinegar
- 1⁄2 cup extra virgin olive oil
- 1 teaspoon Dijon mustard
Directions
- Core cauliflower and break florets into small bite size pieces.
- Core radicchio and slice thinly.
- Place cauliflower and radicchio into a bowl.
- Add celery, scallions, raisins and pistachios.
- Toss ingredients gently.
- In a small bowl, whisk together vinegar, extra virgin olive oil, Dijon mustard and salt and pepper to taste. Whisk until all ingredients have blended completely.
- Pour the dressing over the salad and toss gently to coat.
- Serve immediately.
