  1. Toss the sweet potatoes with oil and thyme; season with salt and pepper. Roast at 400 until tender, 25-30 minutes.
  2. Cook the ravioli according to package directions.
  3. Toss ravioli with goat cheese and pasta water; fold in the sweet potatoes and sprinkle with more goad cheese if desired.
