Raspberry Vinaigrette Dressing

Ingredients
- 1 tablespoon shallot, chopped
- 3⁄4 cup frozen unsweetened raspberries
- 1⁄4 cup frozen apple juice concentrate, unsweetened
- 1⁄4 cup raspberry vinegar
- 1 tablespoon Dijon mustard
- 1⁄8 teaspoon sea salt
- stevia or Splenda sugar substitute, to taste
Directions
- Puree all ingredients in a food proccessor until smooth.
- Refridgerate.
- Makes 5 (1/4 cup) servings.
