Raspberry Truffle Brownies

Rich, rich rich raspberry brownies

Yields: 25 brownies

Ingredients

  • 1 14 cups  semi-sweet chocolate chips
  • 12 cup butter
  • 34 cup brown sugar
  • 2  eggs
  • 2  tablespoons water
  • 12 teaspoon baking powder
  • 34 cup flour
  • Truffle topping

  • 1  cup  semi-sweet chocolate chips, melted and cooled
  • 8  ounces cream cheese, softened
  • 14 cup powdered sugar
  • 13 cup  seedless  raspberry jam
  • Glaze

  • 14 cup  semi-sweet chocolate chips
  • 1  teaspoon shortening, such as crisco

Directions

  1. Melt chocolate with butter.
  2. Cool.
  3. Beat eggs and sugar.
  4. Add chocolate and water.
  5. Mix.
  6. Stir in flour and baking powder.
  7. Bake in a well greased and floured 8" square pan at 350 for 30-35 minutes.
  8. Partially cool.
  9. Make topping.
  10. Beat cream cheese and powdered sugar.
  11. Add jam and beat again.
  12. Beat in melted chocolate chips.
  13. Spread on top of somewhat cooled brownies.
  14. If you let the brownies cool for a long time the layers will separate.
  15. Make glaze.
  16. Melt chocolate chips with shortening.
  17. Drizzle over the cream cheese layer.
  18. Chill at least 2 hours before serving.
  19. Can be partially frozen for easier cutting.
