Raspberry Ginger Shandy

Ingredients
- 4 ounces Mike's hard lemonade
- 1 1⁄2 cups fresh raspberries
- 2 inches slice fresh ginger, peeled and sliced
- 1⁄2 cup water
- 2 tablespoons unbleached cane sugar
- 1 glass ice
- raspberries and lemon wedge (to garnish)
Directions
- Place the raspberries in a blender and puree until smooth. Transfer to a small saucepan and combine with the ginger slices, water and sugar.
- Bring to a boil and simmer until the sugar has completely dissolved, about 1 minute. Remove from heat, cover and let steep for 30 minutes to 1 hour.
- Strain the raspberry ginger juice through a fine mesh sieve into a small bowl and discard the solids. Let cool completely.
- Fill a mason jar with ice and pour 4 ounces of mike’s hard lemonade with the previously made ingredients.
- Stir to combine, garnish with raspberries on top and a wedge of fresh lemon.
