Raspberry Ginger Shandy

Ingredients

  • 4  ounces  Mike's hard lemonade
  • 1 12 cups fresh raspberries
  • 2  inches  slice fresh ginger, peeled and sliced
  • 12 cup water
  • 2  tablespoons  unbleached cane sugar
  • 1  glass  ice
  •  raspberries and lemon wedge (to garnish)

Directions

  1. Place the raspberries in a blender and puree until smooth. Transfer to a small saucepan and combine with the ginger slices, water and sugar.
  2. Bring to a boil and simmer until the sugar has completely dissolved, about 1 minute. Remove from heat, cover and let steep for 30 minutes to 1 hour.
  3. Strain the raspberry ginger juice through a fine mesh sieve into a small bowl and discard the solids. Let cool completely.
  4. Fill a mason jar with ice and pour 4 ounces of mike’s hard lemonade with the previously made ingredients.
  5. Stir to combine, garnish with raspberries on top and a wedge of fresh lemon.
