Randy's Tender Buttermilk Apple Pancakes

Ingredients
Dry Ingredients
- 1 cup flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon cinnamon
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon nutmeg
Wet Ingredients
- 1 egg
- 1 cup buttermilk
- 2 tablespoons butter, melted (or vegetable oil)
- 3 tablespoons applesauce
- 1 medium apple, peeled, cored, and diced small
Directions
- Place dry ingredients in a medium bowl. Combine well with a whisk.
- Whisk together wet ingredients until well-mixed, then add to dry ingredients. Mix until just blended. Bake by 1/3 cup measures on a hot griddle as usual.
