Randy's Chicken Marinade

A marinade we make in the Vitamix, which could be done in another blender or food processsor if the fruit is cut small enough. Also good to marinate pork or seafood. Show more

Yields: 1 1/2-2 cups

Ingredients

  • 1  orange (preferably Cara Cara)
  • 1  lime
  • 1  lemon
  • 2 -3  large garlic cloves
  • 1  small  white onion
  • 1  teaspoon Mexican oregano
  • 1  teaspoon  dried hot red chili pepper (chipotle, ground)
  • 1  tablespoon  dried red chili (mulato, pasilla, or ancho)
  • 2  teaspoons kosher salt
  • 14 cup  white tequila
  • 14 cup olive oil

Directions

  1. Peel and de-seed the citrus fruits and cut each in half. You may need to cut the halves into much smaller pieces if using a food processor or regular blender.
  2. Combine all ingredients in a blender jar or food processor work bowl and puree it.
