Ranch-Style Mock Mashed Potatoes

Ingredients

  • 1  head cauliflower, washed and broken into florets (about 4 C)
  • 1  cup  light  ranch dressing
  • 1  tablespoon nonfat milk
  • 1  tablespoon butter or 1  tablespoon margarine
  • 14 teaspoon salt

Directions

  1. Place florets into a steamer and cook for about 20 minutes or until tender. Transfer to a food processor.
  2. Add the rest of the ingredients and blend until the mixture reaches the consistency of mashed potatoes.
