Ingredients

  • 16  medium shrimp, peeled and deveined
  • 2  teaspoons olive oil
  • 1  tablespoon lemon juice
  • 1  teaspoon  creole seasoning
  • 8  hard-cooked eggs
  • 14 cup  plain  Greek yogurt
  • 1  tablespoon  Hidden Valley Original Ranch Seasoning Mix
  • 2  teaspoons Dijon mustard
  • 2  tablespoons  chopped chives

Directions

  1. Preheat broiler. Toss shrimps with olive oil, lemon juice and Creole seasoning. Spread shrimps mixture in single layer on a baking sheet. Broil for 3 minutes, turning halfway through, or until opaque.
  2. Halve eggs; place egg whites on a plate. Put egg yolks in a medium bowl; mash with potato masher. Stir in yogurt, ranch seasoning mix, mustard and 1½ tablespoons chives.
  3. Spoon egg yolk mixture into egg white cavities; top each with shrimp and garnish with remaining chives.
