Raisin Spice Cake (Microwave)

This cake is quick and easy and SO tasty.

Ingredients

• 1 1⁄2 cups raisins
• 3⁄4 cup brown sugar
• 3⁄4 cup water
• 1⁄2 cup shortening
• 1⁄4 cup molasses
• 1  teaspoon cinnamon
• 1⁄2 teaspoon nutmeg
• 1⁄4 teaspoon clove
• 1 3⁄4 cups flour
• 1  teaspoon baking soda

Directions

1. Mix the raisins, brown sugar, water, shortening, molasses and spices in a microwaveable container.
2. Microwave on high for 5-7 minutes until it is boiling.
3. Cool slightly.
4. Mix the flour and baking soda together.
5. Add to the raisin mixture.
6. Pour into a greased 8 inch microwave pan and bake on HIGH 5 minutes or until the centre is done (test with a toothpick).
7. Tastes great with a brown sugar icing.
