Raisin Snack Cake

I had a can of raisin pie filling that needed to be used, and as I am not a pie baker, I decided to use the recipe from inside the can label. I adjusted it for the spices I had on hand. My kids love raisins, so this was a good snack for them. I think I would like to try it next time with a cream cheese icing. Show more

Directions

  1. Stir together flour, baking powder, baking soda, cinnamon and nutmeg, set aside.
  2. In large mixer bowl, cream butter and sugar until light.
  3. Beat in eggs and vanilla.
  4. Add flour mixture to creamed butter mixture alternately with raisin pie filling, blending well after each addition.
  5. Spread in greased 13x9 pan. Bake in 350 degree oven for 30 mins or until done.
  6. Cool and serve.
