Raisin Oatmeal Bread

Ingredients
- 2 1⁄4 teaspoons active dry yeast
- 2 cups warm water
- 1 1⁄2 teaspoons salt
- 3 tablespoons sugar
- 2 tablespoons shortening, softened
- 2 cups all-purpose flour
- 1 cup rolled oats
- 2 cups whole wheat flour
- 1⁄2 cup raisins
Directions
- In a large mixing bowl, dissolve the yeast in the warm water. Stir in the salt, sugar, and shortening, plus 2 cups of flour and rolled oats. Beat this mixture for 3 minutes.
- Stir in the last 2 cups of flour and the raisins; mix till batter is smooth and satiny. Cover with a clean cloth and let rise in a warm place until doubled in size.
- Once doubled, stir down the batter while counting slowly to 15, then spoon the batter into 2 greased loaf pans; cover with a cloth, let rise before baking.
- Bake in a 350F oven for 50 minutes.
